Red Velvet Whoopie Pies


Does it get any better than this 'semi-homemade' version of a whoopie pie? I don't think so....

Ingredients
•1 pkg. (18-1/4 oz.) red velvet cake mix
•3 eggs
•1/2 cup canola oil
•1 tsp. almond extract

Filling:
•1/4 cup butter, softened
•4 ounces cream cheese, room temperature
•1 jar (7 oz.) marshmallow cream

Combine the cake mix, eggs, oil and extract
Beat on low speed for 30 seconds
Beat on medium for 2 minutes
Drop by tablespoonfuls 2 in. apart onto greased baking sheets
Bake at 350 for 8-10 minutes or until edges are set
Cool for 2 minutes before removing to wire racks to cool completely.

Filling:
Mix butter and cream cheese until smooth
Fold in marshmallow cream
Spread the bottoms of half of the cookies
Top with remaining cookies.
Store in the refrigerator.

Chocolate Chip Biscotti




YUM!!! This is a great, easy biscotti recipe. I added chocolate chips, but you could add anything, i.e. craisins, nuts, or everything at once if you have it all on hand. I needed an alternative to the chocolate chip cookie, and I found it!

Ingredients:
1/2 tsp salt
3/4 cup white sugar
2 eggs
1/4 cup vegetable oil
2 tsp vanilla extract

1 3/4 cups flour

1 tsp baking powder
2/3 cup chocolate chips

Mix white sugar with oil, by hand with a whisk.
Add eggs and vanilla extract.
Mix in a separate bowl the dry ingredients.
Add in batches to the wet ingredients.
Switch over to a wooden spoon as it thickens.
Add chocolate chips.
Make 2 logs and place on a cookie sheet
Cook for 30 minutes at 300 or until golden brown.
Let cool for 10 minutes.
Cut into slices.
Place back on cookie sheet and cook for 10 more minutes at 275.



So easy and so good! And you can't have just one!

BBQ Chicken Pizza







This one was just a craving! But doesn't it look good??? It's all that cheese!!! Yum!!!




Ingredients:


2 chicken breasts


1 cup of BBQ sauce


1 cup of shredded mozzerella cheese


1 cup of shredded gouda


3/4 cup of shredded parmesan


1 roll Pillsbury Classic Pizza Dough




Unroll dough onto a rectangular baking sheet

Spread some of the bbq sauce all over


Bake at 425 for 6 minutes

Grill chicken (I use the George Forman grill) for 7-8 minutes

Cut chicken into cubes or slices

Coat with bbq sauce

Layer onto dough

Sprinkle all of the cheeses

Dollop remaining bbq sauce if desired

Bake at 350 for 20 minutes or until cheese is nice and bubbly

Cinnamon Donut Bites

This one is care of "Life as a Lofthouse," one of my favorite food blogs. I don't think you could find an easier, more scrumptious, delightful little snack at any time of day!!! Ingredients:

1 package of Pillsbury Cinnamon Buns

1/4 cup cinnamon/sugar blended together

1 cup of vegetable oil


Cut
buns into 4 bite sized pieces

Cook
in skillet with hot oil, (but not too hot or dough will burn) until golden brown all around

Dry
on a plate with paper towels to reduce oil

Roll
in cinnamon/sugar

Drizzle
with the icing that comes with cinnamon buns


This is a super fun one for the kids, as they can do the rolling and the eating!!!! Enjoy!!!
