Tomato Tortellini Soup





This one is a nice, easy winter soup. The kind that makes you go 'ahhhh'.






Ingredients:


6 cups of chicken broth

4 oz chive and onion cream cheese

1 can condensed tomato soup

1 package of refrigerated tortellini



Directions:


Mix all ingredients

Bring to a low boil

Lower heat and add tortellin

Simmer for 10 minutes

Serve and enjoy!

Life as a Lofthouse (Food Blog): Baked Chicken Croquettes

A big hit with the hubby, and another easy peasy one!

Baked Chicken CroquettesMakes about 22-24 croquettes (Serves 4-6)
3 cups cooked Chicken, finely chopped ( I used my food processor)1/2 cup Chicken Broth1 Tablespoon dried Minced Onion1 Tablespoon dried ChivesSalt and Pepper, to taste
2 cups Mashed Potatoes1 1/2 cups prepared Stuffing ( I use Stove-Top chicken stuffing)3/4 cup Dried Seasoned BreadcrumbsOlive Oil cooking spray
Gravy:2 packets Chicken Gravy mixwater packets call for(Prepare according to package directions)
DIRECTIONS: Preheat oven to 450 degrees. In a large skillet, over medium heat add the finely chopped chicken. Stir in the broth, minced onion and chives. Season with salt and pepper. Cook until mixture is heated through. About 5 minutes or so. Remove from heat.In a large mixing bowl, add the mashed potatoes and stuffing. Season with salt and pepper. Stir. Then add in chicken mixture. Stir together gently until well combined. Once mixture has cooled slightly, take a 1/4 cup of mixture at a time and shape into an oval log. Roll in the dried breadcrumbs and then place on a foil-lined baking sheet. Repeat with remaining mixture, setting croquettes atleast 1 inch apart so their not touching. Once all croquettes are made generously spray them with olive oil spray. Bake for 15 minutes or until golden-brown and crispy. Serve with gravy!

GREAT SIDE DISH!






Au Gratin Potatoes
4 medium Russet potatoes, peeled and sliced into 1/4 inch slices
salt and pepper to taste
4 Tablespoons butter
3 Tablespoons flour
1/2 teaspoon salt
2 cups milk
3 cups shredded Cheddar cheese
Preheat oven to 400 degrees. Spray a 8x8 glass baking dish with cooking spray.
Rinse/clean potatoes with water and peel. Slice into 1/4 inch slices. Layer half the potatoes in the baking dish. Season with salt and pepper.
In a medium saucepan over medium heat, melt the butter. Mix in the flour and salt and stir with a whisk for about 30 seconds. Stir in milk. Continue to stir and cook until mixture has thickened. Remove from heat and stir in cheese. Stir until cheese completely melts.
Pour half the cheese sauce over potatoes that are in the dish. Layer the rest of potatoes over the top, sprinkle again with salt and pepper, and then pour the remaining cheese sauce on top. Cover with foil and bake for 1 hour.
Carefully remove foil, and continue to bake uncovered for another 15 minutes. Remove from oven and let stand about 10 minutes before serving.

Sloppy Joes
1 Tablespoon Butter
1/4 cup chopped Onion
1 lb Lean Ground Beef
1 cup Ketchup
1/2 cup Water
1/4 cup packed Brown Sugar
2 Tablespoons Worcestershire Sauce
1 Tablespoon Red Wine Vinegar
2 teaspoons Chili Powder
1 teaspoon Salt
1/2 teaspoon Pepper
6 Hamburger Buns
Melt the 1 Tablespoon of butter in a medium saucepan over medium heat. Add the ground beef and onion and cook until meat is no longer pink. Drain grease.
Add the ketchup, water, brown sugar, worcestershire sauce, vinegar, chili powder, salt and pepper. Stir well and let simmer over low heat for 20 minutes.
Butter the hamburger buns, if desired, and toast them under the broiler. Watch closely so they dont burn. Spoon meat mixture onto the bottom halves and cover with tops. Serve immediately. Serves 6.

Butterball Kiss Cookies



A super easy treat for any time of year and any occasion. I made these for my daughters' Halloween Party. You can change the sugar color to match your festival, and they look so darling....Enjoy!

Ingredients:
2 sticks of butter
1/2 cup + 2 tbsp of brown sugar
2 tsp vanilla extract
2 1/4 cups of flour
25 chocolate kisses
crystallized sugar for dipping dough balls

Directions:
Mix butter, sugar and vanilla extract
Add flour
Roll into 1 inch balls
Roll into sugar
Place onto trays
Cook for 15 minutes at 350
Remove and press kisses into cookies
Cook for 2 minutes more
Cool and EAT!

Strawberry Nutella Country Cake




Ingredients:

One box of yellow cake mix
1 pint of sliced strawberries
3 cups of Cool Whip or fresh whipped if you are so inclined...
1/2 cup Nutella

Directions:
Bake cake in two pans and cool completely
Spread a layer of Nutella on one.
Place sliced strawberries around the edge
Spread whipped cream on top
Repeat layers
Top with one strawberry in the middle

So easy and so good!

Cinnamon Roll Cake

Super Yum!!!

Ingredients:
Cake:
3 cups of flour
1/4 tsp salt
1 cup sugar
4 tsp baking powder
1 1/2 cups milk
2 eggs
2 tsp vanilla extract
1 stick of melted butter
Topping:
2 sticks of softened butter
1cup of brown sugar2 tbsp flour
1 tbsp cinnamon
Glaze:
2 cups of powdered sugar
5 tbsp milk
1 tsp vanilla

Directions:
Mix flour, salt, sugar, baking powder, milk, eggs and vanilla
Add melted butter
Pour into 9x13 sprayed baking pan

Then mix sticks of butter, brown sugar, flour, and cinnamon
Drop onto batter and swirl
Bake at 350 for 30 minutes

For Glaze:
Mix powdered sugar, milk and vanilla
Drizzle over warm cake

Peanut Butter and Nutella Swirl Cookies






Wow! If you love peanut butter and Nutella, then this is heaven!




Ingredients:


1/2 cup softened butter


3/4 cup peanut butter


1/2 cup white sugar


1/2 cup light brown sugar


1 egg


1/2 tsp vanilla extract


3/4 tsp baking soda


1/4 tsp salt


1 3/4 cups flour


1/4 cup nutella







Blend butter, sugars, egg and vanilla


Add baking soda, salt, and flour


Microwave nutella for 10 seconds, then drizzle on top of dough


Swirl with butter knife


Chill for 15 minutes


Roll into balls


Place onto greased cookie sheet


Press down with fork for crisscross effect


Bake at 350 for 7-10 minutes

Red Velvet Whoopie Pies


Does it get any better than this 'semi-homemade' version of a whoopie pie? I don't think so....

Ingredients
•1 pkg. (18-1/4 oz.) red velvet cake mix
•3 eggs
•1/2 cup canola oil
•1 tsp. almond extract

Filling:
•1/4 cup butter, softened
•4 ounces cream cheese, room temperature
•1 jar (7 oz.) marshmallow cream

Combine the cake mix, eggs, oil and extract
Beat on low speed for 30 seconds
Beat on medium for 2 minutes
Drop by tablespoonfuls 2 in. apart onto greased baking sheets
Bake at 350 for 8-10 minutes or until edges are set
Cool for 2 minutes before removing to wire racks to cool completely.

Filling:
Mix butter and cream cheese until smooth
Fold in marshmallow cream
Spread the bottoms of half of the cookies
Top with remaining cookies.
Store in the refrigerator.

Chocolate Chip Biscotti




YUM!!! This is a great, easy biscotti recipe. I added chocolate chips, but you could add anything, i.e. craisins, nuts, or everything at once if you have it all on hand. I needed an alternative to the chocolate chip cookie, and I found it!

Ingredients:
1/2 tsp salt
3/4 cup white sugar
2 eggs
1/4 cup vegetable oil
2 tsp vanilla extract

1 3/4 cups flour

1 tsp baking powder
2/3 cup chocolate chips

Mix white sugar with oil, by hand with a whisk.
Add eggs and vanilla extract.
Mix in a separate bowl the dry ingredients.
Add in batches to the wet ingredients.
Switch over to a wooden spoon as it thickens.
Add chocolate chips.
Make 2 logs and place on a cookie sheet
Cook for 30 minutes at 300 or until golden brown.
Let cool for 10 minutes.
Cut into slices.
Place back on cookie sheet and cook for 10 more minutes at 275.



So easy and so good! And you can't have just one!

BBQ Chicken Pizza







This one was just a craving! But doesn't it look good??? It's all that cheese!!! Yum!!!




Ingredients:


2 chicken breasts


1 cup of BBQ sauce


1 cup of shredded mozzerella cheese


1 cup of shredded gouda


3/4 cup of shredded parmesan


1 roll Pillsbury Classic Pizza Dough




Unroll dough onto a rectangular baking sheet

Spread some of the bbq sauce all over


Bake at 425 for 6 minutes

Grill chicken (I use the George Forman grill) for 7-8 minutes

Cut chicken into cubes or slices

Coat with bbq sauce

Layer onto dough

Sprinkle all of the cheeses

Dollop remaining bbq sauce if desired

Bake at 350 for 20 minutes or until cheese is nice and bubbly

Cinnamon Donut Bites

This one is care of "Life as a Lofthouse," one of my favorite food blogs. I don't think you could find an easier, more scrumptious, delightful little snack at any time of day!!! Ingredients:

1 package of Pillsbury Cinnamon Buns

1/4 cup cinnamon/sugar blended together

1 cup of vegetable oil


Cut
buns into 4 bite sized pieces

Cook
in skillet with hot oil, (but not too hot or dough will burn) until golden brown all around

Dry
on a plate with paper towels to reduce oil

Roll
in cinnamon/sugar

Drizzle
with the icing that comes with cinnamon buns


This is a super fun one for the kids, as they can do the rolling and the eating!!!! Enjoy!!!
